Her Special Gin n' Tonic

2 oz gin
1.25 oz St. Germain Elderflower Liqueur
juice of 1/4 lime
tonic (or soda) water

Fill an old-fashioned glass with ice. Add the gin, lime, St. Germain, and fill with tonic water. Stir once and serve.

Ginger Pimm's cocktail

1 part Pimm's No. 1

2 parts sparkling water & fresh ginger syrup to taste

fresh ginger simple syrup;

  1 cup sugar to 2 cups water and 1/2 cup fresh ginger peeled and chopped. Cook the water and sugar over medium heat until it simmers and the sugar dissolves. Remove from heat and add the ginger.  Let sit 2 hours.  Strain into a glass container.
