Ginger Pimm's cocktail

1 part Pimm's No. 1
2 parts sparkling water & fresh ginger syrup to taste

fresh ginger simple syrup;
  1 cup sugar to 2 cups water and 1/2 cup fresh ginger peeled and chopped. Cook the water and sugar over medium heat until it simmers and the sugar dissolves. Remove from heat and add the ginger.  Let sit 2 hours.  Strain into a glass container.
